Mandarinų ir Migdolų Pyragas/ Mandarin and Almond Cake

Mandarinai visada man asocijuojasi su Kalėdomis, tikriausiai todėl, kad visada dovanų maišelyje po eglute būdavo saldainių, riešutų ir mandarinų. Nors dar nežinau ar šį pyragą tikrai kepsiu Kalėdoms, nes mano sąrašas darosi perilgas, bet jis puikiai tiktų Kalėdinių skanėstų kategorijai (kartu su meduoliniais keksiukai ir sausainiais su prieskoniais).

Šio pyrago receptą radau taip sakant - iš reikalo. Vyras išvyko kelioms savaitėms ir paliko 4 mandarinus (aš jų neapdorotų nemėgstu), todėl po kelių dienų ėmiau ieškoti ką su jais padryti, kad nereikėtų išmesti. Ir radau puikų receptą, jam iškepti tereikia 4 produktų, pagaminti labai paprasta. Skonis tikrai puikus- pyragas drėgnas, saldus su kartoku mandarinų žievelių prieskoniu.
Pyrago papuošimui aš paprasčiausiai kelis mandarinų sulčių šaukštus sumaišiau su cukraus pudra ir užliejau gautu glaistu.


Porcijos: 10-12

1 porcijos (1/10) energetinė vertė: 272 kcal, 15,1 gr. riebalų, 23,8 gr. cukraus

Produktai:

3 mandarinai
1 stiklinė cukraus
6 kiaušiniai
2 stiklinės (250 gr.) maltų migdolų

Gaminimo procesas:

Mandarinus (neluptus) užpilti vandeniu, kad būtų apsemti, užvirti ir virti ant nedidelės ugnies 1 valandą.

Pilnai atvėsinti mandarinus, išimti sėklas ir sutrinti. Elektriniu plaktuvu gerai išplakti kartu kiaušinius ir cukrų iki vientisos blizgios masės. Sudėti mandarinų košę ir įmaišyti migdolus. Viską gerai išmaišyti.

Supilti tešlą į 22 cm riebalais išteptą kepimo formą. Kepti iki 160C įkaitintoje orkaitėje 1 val.


Mandarins I always remind me of Christmas, probably because always when I was a kid in a git bags under the Christmas tree we could find candies, nuts and mandrains. I do not know if I will be making this cake for Christmas (as my list is getting really long), but this cake would fdefinitely I would add to the Christmas treats cathegory together with gingerbread muffins and cookies with spices.
This cake recipe I found for a simple reason- I had to use the mandarins that my husband left when he went away for few weeks. I don‘t really like raw mandarins so after a few days I began to look what to do with them. And I found a great recipe, you need only 4 ingredients and it‘s so easy to make. Besides it tastes great – cake is moist, sweet with a hint of that mandarine zest bitterness.
For the decoration I just mixed few tablespoons of mandarine juice with icing sugar and poured it over the cake.


Servings: 10-12

Nutritional value of 1 serving (1/10): 272 calories, 15,1 gr. fat, 23,8 gr. sugars

Products:

3 mandarins
1 cup sugar
6 eggs
2 cups (250 gr.) almond meal

Method:

Place mandarins (unpeeled) in a pan, cover them with water, bring to a boil and simmer for 1 hour.

Cool mandarins completely, then remove the seeds and puree them. Using electric mixer beat together the eggs and sugar until smooth and glossy. Add the mandarin puree and almond meal. Mix everything well.

Pour the batter into a greased 22 cm round baking form. Bake in a preheated to 160C oven for 1 hour.
