Migdoliniai Raguoliai/ Almond Croissant

Daug kam galiu atsispirti, bet tikrai ne migdoliniams raguoliams. Nuo tada kai jų paragavau, kiekvieną kartą kai lankausi prancūzų kepykloje nusiperku vieną. Ir kurį laiką galvojau, kad reikėtų pabandyti jų pasigaminti namie. Vienas iš skaniausių atradimų.

6 vnt.dienos senumo meduoliai perpjauti per pusę
Migdolų plokštelių ir cukraus pudros pabarstymui

Migdolų kremui:

0,5 stiklinės sviesto, kambario temperatūros
0,5 stiklinės rudojo cukraus
1 stiklinė maltų migdolų
1 didelis kiaušinis + 1 kiaušinio trynys
1 a.š. vanilės ekstrakto
3 v.š. miltų
0,25 a.š. smulkios druskos

Gaminimo procesas:

Migdolų kremui: suplakti kartu sviestą ir sviestą iki purios masės (apie 2 minutes). Sudėti maltus migdolus ir gerai išplakti. Sudėti kiaušinį ir trynį, tuomet vanilės ekstraktą. Įmaišyti miltus ir druską, išplakti iki vientisos masės. Migdolinis kremas gali būti laikomas šaldytuve sandariai uždarytame inde iki 2 savaičių.

Orkaitę įkaitinti iki 190C. Kepimo skardą iškloti kepimo popieriumi. Pasilikti 0,3 stiklinės migdolų kremo, likusį kremą užtepti ant raguolių. Uždėti raguolių viršutinę dalį, šiek tiek paspausti ir likusią 0,3 stiklinės kremo padalinti ir paskleisti ant meduolių viršaus. Pa barstyti migdolų plokštelėmis.

Kepti apie 20 minučių arba kol raguolio viršus bus auksiniai rudas ir kremas bus iškepęs. Jei viršus pergreitai ruduoja uždengti folija. Išėmus iš orkaitės pabarstyti viršų cukraus pudra. Patiekti šiltą arba kambario temperatūros. Man asmeniškai skanesni pilnai atvėsę.


Many things I can resist, but certainly not the almond croissants. Since I tasted them, every time I go to French bakery I get one. And for a while I thought that I should try to making them at home. It is definitely one of the most delicious discoveries.

Products:

6 one-day old croissants, cut in half
Sliced almonds and powdered sugar to dust

For the almond cream:

0.5 cup butter, room temperature
0.5 cup brown sugar
1 cup almond meal
1 large egg + 1 egg yolk
1 tsp vanilla extract
3 tbsp flour
0.25 teaspoon fine salt

Method:

To make almond cream: beat together butter and sugar until fluffy (about 2 minutes). Add the almond meal and beat well. Add egg and the yolk, then add vanilla extract. Mix in the flour and salt and beat until smooth. Almond cream can be kept in the fridge in airtight container for up to 2 weeks.

Preheat the oven to 190C. Line baking tray with baking paper. Set aside 0.3 cup of almond cream, spread the rest of the cream on the bottoms of the croissants. Cover with the top part, slightly press the croissants, then spread the remaining 0.3 cup of cream ton top of croissants. Sprinkle with sliced almonds.

Bake for about 20 minutes or until the top is golden brown and the cream is cooked through. If the top starts browning too quickly cover with foil. Once you remove croissants out of the oven dust with icing sugar. Serve warm or at room temperature. I personally like the taste much better when they are cooled completely.
